Sapi Masak Rica: A Flavorful Indonesian Beef Stew
Ingredients:
- 250 grams beef (preferably rendang cut, cubed into 2×2 cm pieces)
- 1 large onion, thinly sliced
- 2 large red chilies, sliced diagonally
- 2 bay leaves
- 2 kaffir lime leaves
- 1 stalk lemongrass, smashed
- 1 tablespoon sesame oil
- 2 tablespoons sweet soy sauce (kecap manis)
- 1 teaspoon soy sauce (kecap asin)
- 1 teaspoon salt
- 1 teaspoon sugar
- 150 ml water
- 1 stalk scallion, cut into large pieces
For the Spice Paste:
- 4 shallots
- 2 cloves garlic
- 5 bird’s eye chilies
- 3 red chilies
- 2 cm turmeric
- 1 teaspoon ground coriander
- 3 tablespoons water

Prepare the Beef:
- Cut the beef into 2×2 cm cubes. Use a mortar and pestle to pound the pieces lightly until flattened, which will help tenderize the meat.

Cook the Spice Paste:
- In a blender or food processor, combine the shallots, garlic, bird’s eye chilies, red chilies, turmeric, ground coriander, and 3 tablespoons of water. Blend into a smooth paste.

Sauté the Aromatics:
- Heat 2 tablespoons of oil in a pan over medium heat. Add the spice paste, bay leaves, kaffir lime leaves, lemongrass, onion, and red chilies. Sauté until fragrant and the onions are translucent.

Add the Beef:
- Add the beef cubes to the pan, stirring until the meat is browned and coated with the spice paste.

Season the Dish:
- Pour in the sesame oil, sweet soy sauce, soy sauce, salt, and sugar. Mix well to ensure the beef is evenly coated with the seasonings.

Simmer:
- Add the water to the pan and stir. Cover and cook over low heat for about 15 minutes, or until the beef is tender and the sauce has reduced.

Finish and Serve:
- Taste the stew and adjust the seasoning if needed. Add the scallions and stir well. Remove from heat.
