Oseng Sapi Mercon 💥: A Fiery Indonesian Beef Stir-Fry

Ingredients:

  • 250 grams beef (cut into small cubes; originally 300 grams in the recipe)
  • 1 board of petai (slices, peeled)
  • 1 stalk lemongrass (crushed)
  • 1 piece galangal (sliced)
  • 2 bay leaves
  • 1 kaffir lime leaf (optional, for added flavor)
  • 1 small red tomato (cut into quarters, optional addition)
  • Salt to taste
  • Beef bouillon powder (to taste; optional)
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1/2 tablespoon brown sugar
  • 15 whole bird’s eye chilies (adjust to taste; use 6 for a milder heat)
  • For the spice paste:
    • 6 shallots
    • 4 garlic cloves
    • 6 red chilies
    • 10 bird’s eye chilies (optional; use fewer if you prefer less heat)

Instructions:

  1. Prepare the Beef: Boil the beef in water until tender. Once cooked, remove from the pot, cut into small pieces, and set aside. Retain some of the beef broth for later use.

  2. Make the Spice Paste: Blend the shallots, garlic, red chilies, and bird’s eye chilies into a smooth paste.

  3. Sauté the Spice Paste: Heat a little oil in a pan over medium heat. Add the spice paste and sauté until fragrant.

  4. Add Aromatics: Incorporate the crushed lemongrass, sliced galangal, bay leaves, and kaffir lime leaf (if using) into the pan. Stir well to combine.

  5. Combine Ingredients: Add the petai slices and beef pieces to the pan. Mix thoroughly to ensure the beef and petai are well coated with the spices.

  6. Add Broth and Seasonings: Pour in the reserved beef broth and season with salt, brown sugar, and sweet soy sauce. Stir to blend the flavors.
