Spicy Beef Stir-Fry (Oseng Daging Sapi Pedas)

Ingredients:

  • 600 grams beef, cut into cubes
  • 2 potatoes, diced
  • 1 thumb-sized piece of galangal, crushed
  • 1 thumb-sized piece of ginger, crushed
  • 3 bay leaves
  • 2 stalks of lemongrass, crushed
  • 1 teaspoon sweet soy sauce (kecap manis)
  • Salt, sugar, beef bouillon (Royco), and black pepper, to taste

For the Spice Paste:

  • 4 cloves garlic
  • 3 shallots
  • 8 red curly chilies
  • 20 red bird’s eye chilies (adjust according to heat preference)
  • 2 candlenuts

Instructions:

  1. Prepare the Beef:
    Begin by washing the beef thoroughly. Place it in a pot and cover with water. Bring to a boil and cook for about 20 minutes. Add a bit of beef bouillon (Royco) for extra flavor. Once cooked, remove the beef from the pot but keep the broth aside.

  2. Make the Spice Paste:
    In a blender or food processor, combine the garlic, shallots, red curly chilies, bird’s eye chilies, and candlenuts. Blend until you have a smooth paste.

  3. Cook the Spice Paste:
    Heat a generous amount of oil in a large skillet or wok over medium heat. Add the spice paste, crushed lemongrass, galangal, ginger, and bay leaves. Sauté until fragrant and the paste has darkened slightly.

  4. Add Potatoes and Beef:
    Toss in the diced potatoes and beef cubes. Stir well to coat the ingredients with the spice paste. Cook for a few minutes to allow the flavors to meld together.

  5. Add Broth and Seasonings:
    Pour in the reserved beef broth from earlier. Stir to combine and bring to a simmer. Season with salt, sugar, black pepper, beef bouillon, and sweet soy sauce. Mix well.

  6. Simmer and Adjust Seasonings:
    Allow the mixture to simmer until the potatoes are tender and the beef is thoroughly cooked. Stir occasionally to ensure even cooking and prevent sticking.

  7. Finish and Serve:
    Once the potatoes are soft and the beef is cooked through, turn off the heat. Add a chopped tomato and stir briefly. The tomato should warm through but remain intact.

  8. Serving:
    Serve the spicy beef stir-fry hot, accompanied by steamed rice. Enjoy the rich flavors and spicy kick of this flavorful dish.
