Ingredients:

- 600 grams beef, cut into cubes
- 2 potatoes, diced
- 1 thumb-sized piece of galangal, crushed

- 2 stalks of lemongrass, crushed

- Salt, sugar, beef bouillon (Royco), and black pepper, to taste

- 3 shallots
- 8 red curly chilies
- 20 red bird’s eye chilies (adjust according to heat preference)
- 2 candlenuts
