Oseng Kikil Tahu

Ingredients:

  • 500 grams kikil (beef tendon), tenderized and cut into cubes
  • 2 blocks of white tofu, cut into cubes and fried until crispy
  • For the Spice Paste:
    • 10 red chilies
    • A handful of bird’s eye chilies (rawit)
    • A handful of shallots
    • 2 cloves of garlic
  • Additional Ingredients:
    • 1 thumb-sized piece of galangal, crushed
    • 2 bay leaves
    • 2 kaffir lime leaves
    • 1 ripe tomato, chopped

Instructions:

  1. Prepare the Kikil:

    • Boil the kikil in a pot of salted water with 3 bay leaves until it’s tender and the water has boiled for about 5 minutes. Once done, turn off the heat and drain.
  2. Make the Spice Paste:

    • In a hot pan with a little oil, fry the red chilies, bird’s eye chilies, shallots, and garlic for about 3 minutes until fragrant. Remove from heat and drain excess oil. Grind the ingredients into a coarse paste.
  3. Cook the Kikil:

    • In the same pan, add some oil and briefly fry the kikil until slightly crispy. Push the kikil to the side of the pan. Add the ground spice paste to the empty space and stir-fry briefly.
    • Add the crushed galangal, bay leaves, kaffir lime leaves, and chopped tomato to the pan. Stir well to combine all the ingredients.
  4. Combine and Simmer:

    • Add a bit of water to the leftover spice paste residue in the mortar and pour it into the pan with the kikil and spices. Stir to mix everything evenly.
    • Once the aroma is well-developed, add the fried tofu cubes. Mix everything together and cook for a few more minutes until the tofu is well-coated and heated through.
  5. Serve:

    • Once everything is well-cooked and the flavors are melded, your Oseng Kikil Tahu is ready to be served. Enjoy this hearty dish with steamed rice for a complete meal.
