Spicy Indonesian Beef Tendon Soup (Asem Asem Kikil Sapi Pedas)

Ingredients:

  • 1/4 kg beef tendon (cooked and cut into 1 cm cubes)
  • 2 carrots (diced)
  • 1/4 kg baby green beans (diced)
  • 2 bay leaves
  • 2 cm galangal (sliced)
  • 5 cloves garlic (minced)
  • 3 shallots (sliced)
  • 1/2 onion (sliced)
  • 7 small red chilies (sliced)
  • 2 large red chilies (sliced)
  • 2 large green chilies (sliced)
  • 20 ml tamarind water
  • 5 tablespoons sweet soy sauce
  • 1 sachet beef flavor seasoning (such as Masako)
  • 1 sachet ground black pepper
  • 3 tablespoons Raja Rasa sauce (or similar seasoning sauce)
  • 1 tomato (diced)
  • 500 ml water
  • Sugar (to taste)
  • Salt (to taste)
  • Cooking oil

Instructions:

  1. Prepare the Beef Tendon: Clean the beef tendon thoroughly and cook it in boiling water until tender. Once tender, drain and cut it into 1 cm cubes. Set aside.

  2. Prepare the Vegetables: Peel and dice the carrots and baby green beans into 1 cm cubes. Wash thoroughly and set aside.

  3. Prepare Aromatics: Slice the shallots, garlic, onion, and chilies. Set aside.

  4. Sauté Aromatics: Heat a generous amount of cooking oil in a pan. Sauté the sliced shallots, garlic, and onion until they become fragrant. Add the sliced chilies, bay leaves, and galangal. Continue to sauté until the spices release their aroma.

  5. Cook the Vegetables: Add the diced carrots and baby green beans to the pan. Pour in water to help soften the vegetables. Cook until the vegetables are tender.

  6. Season the Soup: Add the sweet soy sauce, Raja Rasa sauce, ground black pepper, beef flavor seasoning, sugar, salt, and tamarind water to the pan. Stir well and adjust the seasoning to taste.

  7. Combine Ingredients: Add the cubed beef tendon to the pan. Simmer until the flavors meld together and the soup thickens slightly.

  8. Finish the Dish: Add the diced tomato to the pan and cook for a few more minutes until everything is well combined and the tomato has softened.

  9. Serve: Remove from heat. The soup is ready to be served hot, garnished with fresh herbs if desired.
