Kikil Sapi
Ingredients:
- 1/4 kg beef tendon (cleaned and boiled)
- 1 tomato (chopped)
- 6 bird’s eye chilies (chopped)
- Salt and sugar (to taste)
- 1 tsp oyster sauce (I use Saori brand, red packaging)
- 1/2 tsp sweet soy sauce
- 1 stalk lemongrass (white part only, bruised)
Ground Spices:
- 3 cloves garlic
- 3 shallots
- 2 cm ginger
- 2 cm galangal
Steps:
- Prepare the Beef Tendon: Cut the boiled beef tendon into cubes.
- Sauté the Spices: Heat a bit of oil in a pan and sauté the ground spices (garlic, shallots, ginger, and galangal) until fragrant.
- Add Vegetables and Lemongrass: Add the chopped chilies, tomato, and bruised lemongrass to the pan. Sauté until the tomatoes soften and the chilies become fragrant.
- Cook the Beef Tendon: Add the cubed beef tendon to the pan. Stir well to coat the tendon with the spices.
- Simmer: Pour in a little water to create a sauce. Add the oyster sauce and sweet soy sauce. Let it simmer until the sauce is absorbed and the tendon is cooked through.
- Season: Add salt and sugar to taste. Adjust the seasoning as needed.
- Serve: Turn off the heat once the flavors have melded together. Serve hot with steamed rice.
