Spicy Indonesian Beef Tendon Stir-Fry

Kikil Sapi

Ingredients:

  • 1/4 kg beef tendon (cleaned and boiled)
  • 1 tomato (chopped)
  • 6 bird’s eye chilies (chopped)
  • Salt and sugar (to taste)
  • 1 tsp oyster sauce (I use Saori brand, red packaging)
  • 1/2 tsp sweet soy sauce
  • 1 stalk lemongrass (white part only, bruised)

Ground Spices:

  • 3 cloves garlic
  • 3 shallots
  • 2 cm ginger
  • 2 cm galangal

Steps:

  1. Prepare the Beef Tendon: Cut the boiled beef tendon into cubes.
  2. Sauté the Spices: Heat a bit of oil in a pan and sauté the ground spices (garlic, shallots, ginger, and galangal) until fragrant.
  3. Add Vegetables and Lemongrass: Add the chopped chilies, tomato, and bruised lemongrass to the pan. Sauté until the tomatoes soften and the chilies become fragrant.
  4. Cook the Beef Tendon: Add the cubed beef tendon to the pan. Stir well to coat the tendon with the spices.
  5. Simmer: Pour in a little water to create a sauce. Add the oyster sauce and sweet soy sauce. Let it simmer until the sauce is absorbed and the tendon is cooked through.
  6. Season: Add salt and sugar to taste. Adjust the seasoning as needed.
  7. Serve: Turn off the heat once the flavors have melded together. Serve hot with steamed rice.
