Beef Tongseng Recipe

Ingredients

  • 500 grams beef
  • 1 cm galangal, bruised
  • 5 shallots
  • 1 stalk lemongrass
  • 2 bay leaves
  • 20 bird’s eye chilies, finely sliced
  • 5 red chilies, roughly chopped
  • 2 scallions, roughly chopped
  • Pepper to taste
  • Water as needed
  • Sweet soy sauce as needed
  • Cooking oil as needed (for sautéing)

  • 3 cm ginger
  • 2 cm turmeric, roasted
  • 3 candlenuts, roasted
