Ungkeb Babat Sapi Ala Rimara: A Traditional Indonesian Beef Tripe Delight

Ingredients:

  • 3/4 kg Beef Tripe (you can skip the intestines if you prefer)
  • 1 1/2 tablespoons garlic powder
  • 1 tablespoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 cm ginger, smashed
  • 2 cm galangal, smashed
  • 2 bay leaves
  • Salt to taste
  • 1/2 tablespoon beef bouillon (such as Royco)
  • 1/2 tablespoon granulated sugar
  • Brown sugar, to taste
  • Water for boiling
  • Oil for frying

Instructions:

  1. Prepare the Tripe: Begin by thoroughly cleaning the beef tripe. To ensure it’s completely clean and free from any grit or sand, it’s often useful to scrub it well. Rinse it under cold water to remove any residual impurities.

  2. Boil the Tripe: Bring a pot of water to a boil. Add the cleaned tripe and 1 teaspoon of salt to the boiling water. Let it cook in the pressure cooker for about 15 minutes. Ensure there’s enough water to cover the tripe throughout the cooking process.

  3. Add Spices and Herbs: After 15 minutes, check that there is still a sufficient amount of water in the pot. Prepare your spices and herbs—garlic powder, turmeric powder, coriander powder, ginger, galangal, and bay leaves. Add these to the pot with the tripe.

  4. Simmer: Bring the mixture to a boil again. Taste the broth and adjust the seasoning with additional salt, beef bouillon, granulated sugar, and brown sugar according to your preference.   5. Check Tenderness: To determine if the tripe is cooked through, test it by piercing it with a fork. The tripe should be tender and easy to puncture. If it is, the cooking is complete; if not, continue to simmer until it reaches the desired tenderness.
