Oseng Cecek Sapi Recipe

Ingredients:

  • 1/4 kg beef tripe (cecek sapi)
  • 1/2 block tempe
  • 6 bird’s eye chilies (cabe rawit)
  • 2 large chilies (cabe besar)
  • 2 shallots (bawang merah)
  • 2 cloves garlic (bawang putih)
  • 2 teaspoons salt
  • 2 teaspoons sugar
  • Sweet soy sauce (kecap manis)
  • 1 thumb-sized piece of galangal (lengkuas)
  • 2 bay leaves (daun salam)
  • Water, as needed

Instructions:

  1. Prepare the Beef Tripe: Start by thoroughly washing the beef tripe under cold water. Place it in a pot, cover with water, and bring to a boil. Simmer until the tripe is half-cooked and tender. Once cooked, drain and set aside.

  2. Prepare the Tempe: Slice the tempe into small cubes, similar in size to the beef tripe for even cooking.

  3. Chop the Vegetables: Thinly slice the shallots and garlic. Slice the bird’s eye chilies and large chilies into rings. Lightly crush the galangal with the side of a knife to release its aroma.

  4. Sauté the Aromatics: Heat a small amount of oil in a pan over medium heat. Add the sliced shallots, garlic, chilies, and galangal. Sauté until the shallots and garlic become fragrant and start to soften.

  5. Cook the Tripe and Tempe: Add a small amount of water to the pan, just enough to create a bit of steam for the next step. Stir in the cubed tempe and the pre-cooked beef tripe. Mix well.

  6. Season the Dish: Pour in a generous amount of sweet soy sauce (kecap manis) to coat the ingredients. Add the sugar and salt. Stir until everything is evenly coated with the seasonings.

  7. Simmer: Add the bay leaves to the pan and cover. Let the mixture simmer gently until the sauce has thickened and the flavors have melded together, about 10-15 minutes. Stir occasionally to ensure that the dish cooks evenly.

  8. Serve: Once the sauce is thick and flavorful, remove from heat. Serve the Oseng Cecek Sapi hot with steamed white rice for a delicious and satisfying meal.
