Rica-Rica Beef with Kemangi (Indonesian Spicy Beef with Basil)

  • 500 grams (1/2 kg) beef, cut into cubes

  • Other Ingredients:
    • 5 cm galangal, smashed
    • 1 stalk lemongrass, smashed
    • 1 bunch kemangi (Indonesian basil) leaves
    • Salt, to taste
    • Sugar, to taste
    • 1 glass of water (approximately 250 ml)
    • Cooking oil, as needed for sautéing

Instructions

  1. Prepare the Spice Paste:

    • Blend the shallots, garlic, ginger, turmeric, and red chili peppers into a smooth paste. If needed, add a little water to facilitate blending.
  2. Sauté the Spice Paste:

    • Heat a generous amount of cooking oil in a large skillet or pan over medium heat.
    • Add the spice paste to the pan and sauté until fragrant and the oil begins to separate from the paste, about 5-7 minutes.
  3. Add Aromatics:

    • Add the smashed galangal and lemongrass to the pan. Stir to combine with the spice paste.
  4. Cook the Beef:

    • Add the cubed beef to the pan. Stir well to coat the beef with the spice paste.
    • Pour in the water and bring the mixture to a simmer.
  5. Season and Simmer:

    • Add salt and sugar to taste. Adjust the seasoning according to your preference.
    • Continue to cook, stirring occasionally, until the beef is tender and the liquid has reduced. If the beef is not yet tender, you can add more water as needed and continue simmering until done.
  6. Finish with Basil:

    • Once the beef is tender and the sauce has thickened to your liking, remove the pan from heat.
    • Stir in the kemangi leaves until they are wilted and well distributed.
  7. Serve:
