Sapi Sambal Pete: A Flavorful Indonesian Beef Dish with Petai

Ingredients:

  • 250 grams beef (preferably sirloin or any cut suitable for stewing)
  • Beef broth (reserved from boiling the beef)
  • 1 board of petai (stink beans)
  • 2 teaspoons oyster sauce
  • Black pepper (to taste)
  • Sesame oil (to taste)
  • Sweet soy sauce (to taste)
  • Fish sauce (to taste)
  • Cooking oil (for sautéing)

For the Spice Paste:

  • 5 curly red chilies
  • 2 red chilies
  • 2 cm ginger
  • 6 shallots
  • 6 garlic cloves
  • 1 teaspoon cumin powder
  • Water (as needed)
  • Sugar (to taste)
  • Salt (to taste)
  • Beef seasoning (optional, to taste)

Instructions:

  1. Prepare the Beef:

    • Cut the beef into bite-sized pieces. In a pot, boil the beef until tender. Reserve the beef broth for later use.
  2. Make the Spice Paste:

    • In a blender, combine the curly red chilies, red chilies, ginger, shallots, garlic cloves, and cumin powder. Add a little water as needed to blend into a smooth paste.
  3. Sauté the Spice Paste:

    • Heat some cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant and the oil begins to separate from the paste.
  4. Combine Ingredients:

    • Add the boiled beef pieces and the reserved beef broth to the pan with the sautéed spice paste. Stir well to combine.
    • Add the petai, oyster sauce, black pepper, sesame oil, sweet soy sauce, and fish sauce. Stir and cook until everything is well mixed and the beef is fully cooked.
  5. Season and Serve:

    • Adjust the seasoning with sugar, salt, and beef seasoning (if using) to taste. Continue to cook until the flavors are well combined and the sauce has thickened slightly.
  6. Serve:

    • Serve the Sapi Sambal Pete hot with steamed rice or as part of a larger meal.
