Spicy Indonesian Black Pepper Chicken Stir-Fry
Ayam Lada Hitam (Indonesian Black Pepper Chicken)
Ingredients:
- 250 grams of chicken breast fillet
- Sufficient lime juice
- Salt
- 1/2 onion, thinly sliced
- 5 cloves of garlic, finely chopped
- 3 shallots, thinly sliced
- 2 scallions, sliced
- 3 bird’s eye chilies, thinly sliced (adjust to taste)
- 1 tablespoon black pepper powder (adjust to taste)
- A pinch of white pepper
- 1 tablespoon oyster sauce
- A little water
Instructions:
- 
Prepare the Chicken: Rinse the chicken breast fillet thoroughly under running water. After cleaning, coat the chicken with lime juice and a pinch of salt. Set aside for a few minutes to marinate.

Sauté the Aromatics: In a large pan or wok, heat a little oil over medium heat. Add the finely chopped garlic, thinly sliced shallots, and onion. Sauté until the onions become translucent and the garlic is fragrant.

Cook the Chicken: Add the marinated chicken to the pan. Sauté the chicken until it changes color to white, indicating that it’s partially cooked. 
- 
Add Seasonings: Incorporate the black pepper powder, oyster sauce, white pepper, and sliced bird’s eye chilies into the pan. Stir well to ensure that the chicken is evenly coated with the seasonings.

Simmer: Add a small amount of water to the pan to create a bit of sauce. Continue to cook the chicken until it becomes tender and the flavors meld together. Adjust the seasoning if necessary.

Finish with Scallions: Just before the dish is fully cooked, add the sliced scallions. Stir them in and cook for another minute until they are slightly wilted but still vibrant.

Serve: Transfer the Ayam Lada Hitam to a serving dish. This flavorful and spicy black pepper chicken pairs well with steamed rice.
