Ingredients:

  • 5 boiled eggs, peeled
  • 4 shallots, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 1 stalk lemongrass, sliced
  • 3 candlenuts
  • 1/2 red chili (seeded), or to taste (adjust with bird’s eye chilies for extra heat)
  • 3 cm kencur (aromatic root), sliced
  • Salt, to taste
  • Sugar, to taste
  • Chicken or beef bouillon, to taste
  • Water, as needed
  • Fried shallots, for garnish
  • A small amount of roasted shrimp paste (terasi), to taste
  • A pinch of ground black pepper

Instructions:

  1. Prepare the Boiled Eggs:

    • Peel the boiled eggs and gently fry them in a pan until slightly golden. To prevent splattering, prick the eggs with a fork before frying.
  2. Prepare the Spice Paste:

    • In a mortar and pestle or blender, grind the candlenuts, kencur, and red chili into a smooth paste. This blend will be the base of your flavorful sauce.
  3. Sauté the Aromatics:

    • Heat a little oil in a pan over medium heat. Add the sliced shallots, garlic, and lemongrass. Sauté until fragrant and the shallots become translucent.
  4. Cook the Spice Paste:

    • Add the spice paste to the pan with the sautéed aromatics. Cook for a few minutes, stirring frequently, until the paste is well-cooked and aromatic.
  5. Simmer the Sauce:

    • Pour in enough water to cover the mixture and stir in salt, sugar, and bouillon to taste. Add a small amount of roasted shrimp paste and a pinch of ground black pepper. Simmer until the sauce is well-blended and the flavors are adjusted to your preference.
  6. Combine with Eggs:

    • Add the previously fried eggs to the pan. Stir gently to coat the eggs with the sauce. Allow it to cook for a few more minutes so the eggs absorb some of the flavors.
