Ayam Saos Padang
Ingredients:
- 1 kg chicken (cut into pieces)
- 2 blocks tofu (cut into cubes)
For the Spice Paste:
- 2 shallots
- 1 garlic clove
- 2 red chilies
- 2 bird’s eye chilies
- 1 tomato
Other Ingredients:
- 3 tablespoons tomato ketchup
- 3 tablespoons chili sauce
- 1 tablespoon soy sauce (Saori)
- 1 stalk green onion (sliced lengthwise)
- 2 kaffir lime leaves
- Sugar, to taste
- Salt, to taste
- Ground black pepper, to taste
- Water, as needed
Instructions:

Prepare the Chicken and Tofu:
- Season the chicken and tofu with salt. Heat oil in a pan and fry the chicken and tofu until golden brown. Remove and set aside.

Make the Spice Paste:
- In a blender or food processor, blend the shallots, garlic, red chilies, bird’s eye chilies, and tomato until smooth.

Cook the Spice Paste:
- Heat a little oil in a pan over medium heat. Add the spice paste and sauté until fragrant and the oil begins to separate from the paste.

Add Sauces and Flavorings:
- Stir in the tomato ketchup, chili sauce, and soy sauce. Mix well to combine.

Combine and Simmer:
- Add the fried chicken and tofu to the pan. Mix well so that the chicken and tofu are coated with the sauce. Adjust seasoning with sugar, salt, and ground black pepper.

- Pour in enough water to cover the ingredients. Let it simmer for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.

- Add the sliced green onion and kaffir lime leaves. Stir briefly to combine.
