Spicy Indonesian Chicken Balado
Ingredients:
- 1/4 kg chicken fillet, thinly sliced
- 1 onion, diced
- Dried red chilies, to taste
- Ground spices (shallots, garlic, candlenuts, pepper, salt), as needed
- Sugar, to taste
- Cardamom pods
- Cooking oil
- Salt and pepper to taste
Instructions:
- Heat cooking oil in a pan over medium heat. Add diced onion and sauté until fragrant.
- Add chicken fillet slices to the pan. Sauté until the chicken changes color and becomes fragrant.
- Add the ground spices (shallots, garlic, candlenuts, pepper, salt) and dried red chilies to the pan. Stir well to combine.
- Crush the cardamom pods slightly and add them to the pan along with a pinch of sugar for a hint of sweetness.
- Continue to cook until the chicken is fully cooked and the spices are well blended, ensuring the flavors meld together.
- Taste and adjust seasoning with salt and pepper if needed.
- Remove from heat and serve hot with steamed white rice.
