Spicy Indonesian Chicken Balado

Ingredients:

  • 1/4 kg chicken fillet, thinly sliced
  • 1 onion, diced
  • Dried red chilies, to taste
  • Ground spices (shallots, garlic, candlenuts, pepper, salt), as needed
  • Sugar, to taste
  • Cardamom pods
  • Cooking oil
  • Salt and pepper to taste

Instructions:

  1. Heat cooking oil in a pan over medium heat. Add diced onion and sauté until fragrant.
  2. Add chicken fillet slices to the pan. Sauté until the chicken changes color and becomes fragrant.
  3. Add the ground spices (shallots, garlic, candlenuts, pepper, salt) and dried red chilies to the pan. Stir well to combine.
  4. Crush the cardamom pods slightly and add them to the pan along with a pinch of sugar for a hint of sweetness.
  5. Continue to cook until the chicken is fully cooked and the spices are well blended, ensuring the flavors meld together.
  6. Taste and adjust seasoning with salt and pepper if needed.
  7. Remove from heat and serve hot with steamed white rice.
