Ingredients:
- 1/2 kg chicken bones, cleaned and chopped
- 5 red curly chilies
- 5 bird’s eye chilies (adjust for spiciness)
- 4 shallots
- 2 cloves garlic
- 1 small piece turmeric
- 2 bay leaves
- 1 kaffir lime leaf
- 1 stalk lemongrass, bruised
- 1 small piece ginger, bruised
- 1 lime
- Chicken broth powder, to taste
- Granulated sugar, to taste
- Sweet soy sauce, to taste
- 500 ml water (for boiling the bones)
- Cooking oil (for sautéing)
Instructions:

Clean and chop the chicken bones. Marinate the bones with lime juice and set aside.

Prepare the spices by blending shallots, garlic, chilies, and turmeric until smooth.

Boil water in a pot and add the bruised ginger and kaffir lime leaf. Simmer the chicken bones until the water reduces.

In a separate pan, heat cooking oil and sauté the blended spices until fragrant. Add water as needed along with bay leaves and bruised lemongrass. Stir in the chicken bones.

Season with chicken broth powder, granulated sugar, and sweet soy sauce to taste. Adjust the seasoning and let the chicken bones absorb the flavors.
