Spicy Opor Ayam
Ingredients:
- Chicken: 1/2 kg chicken, cut into pieces
Spice Paste:
- 10 cloves garlic
- 5 cloves shallots
- 4 candlenuts (toasted)
- 1 thumb-sized piece of ginger
- 10 red bird’s eye chilies
- 2 tablespoons turmeric powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon pepper
Complementary Ingredients:

- 2 thumb-sized pieces of galangal, bruised
- 2 stalks lemongrass, bruised
- 2 bay leaves
- 2 kaffir lime leaves
- 2 packs (65 ml each) of Kara coconut milk
- Water, as needed (to mix with the coconut milk)
- 1 teaspoon salt
- Chicken stock powder, to taste
Steps:
- Prepare the Spice Paste: Blend or grind all the ingredients for the spice paste until smooth.
- Sauté the Spice Paste: In a pan, sauté the spice paste for a few minutes until fragrant.
- Add Aromatics and Chicken: Add the galangal, lemongrass, bay leaves, and kaffir lime leaves. Sauté briefly, then add the chicken pieces and stir well to coat the chicken with the spice paste.
- Simmer the Chicken: Let the chicken sit for a while to absorb the flavors, then pour in the diluted coconut milk (a mix of Kara coconut milk and water).
- Cook and Thicken: Stir well and cook until the chicken is cooked through and the sauce has thickened to your desired consistency.
- Season and Serve: Adjust seasoning with salt and chicken stock powder to taste. Serve hot and garnish with crispy fried shallots for an extra burst of flavor.
