Spicy Indonesian Chicken Curry (Opor Ayam Pedas)

Spicy Opor Ayam

Ingredients:

  • Chicken: 1/2 kg chicken, cut into pieces

Spice Paste:

  • 10 cloves garlic
  • 5 cloves shallots
  • 4 candlenuts (toasted)
  • 1 thumb-sized piece of ginger
  • 10 red bird’s eye chilies
  • 2 tablespoons turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon pepper

Complementary Ingredients:

  • 2 thumb-sized pieces of galangal, bruised
  • 2 stalks lemongrass, bruised
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 2 packs (65 ml each) of Kara coconut milk
  • Water, as needed (to mix with the coconut milk)
  • 1 teaspoon salt
  • Chicken stock powder, to taste

Steps:

  1. Prepare the Spice Paste: Blend or grind all the ingredients for the spice paste until smooth.
  2. Sauté the Spice Paste: In a pan, sauté the spice paste for a few minutes until fragrant.
  3. Add Aromatics and Chicken: Add the galangal, lemongrass, bay leaves, and kaffir lime leaves. Sauté briefly, then add the chicken pieces and stir well to coat the chicken with the spice paste.
  4. Simmer the Chicken: Let the chicken sit for a while to absorb the flavors, then pour in the diluted coconut milk (a mix of Kara coconut milk and water).
  5. Cook and Thicken: Stir well and cook until the chicken is cooked through and the sauce has thickened to your desired consistency.
  6. Season and Serve: Adjust seasoning with salt and chicken stock powder to taste. Serve hot and garnish with crispy fried shallots for an extra burst of flavor.
