    • 4 curly red chilies (cabe merah keriting)
    • 3 bird’s eye chilies (cabe rawit setan; add more for extra heat)
    • 1 small piece of turmeric (kunyit)
    • 1 small piece of ginger (jahe)
    • 3 candlenuts (kemiri)
  • For Additional Seasonings:
    • 1 bay leaf (daun salam)
    • 3 kaffir lime leaves (daun jeruk)
    • 1 stalk of lemongrass, smashed
    • 4 bird’s eye chilies, sliced coarsely
    • Spring onions (daun bawang)
    • Sugar, to taste
    • Salt, to taste
    • Flavor enhancer (optional), to taste
    • 100 ml water
    • Cooking oil for sautéing

Instructions

  1. Prepare the Chicken Fillet:

    • Slice the chicken breast fillet lengthwise. Heat oil in a pan and fry the chicken slices until they turn golden brown. Remove from the pan and drain on paper towels.
  2. Make the Spice Paste:

    • In a blender or food processor, combine the shallots, garlic, curly red chilies, bird’s eye chilies, turmeric, ginger, and candlenuts. Blend until you achieve a smooth paste.
  3. Cook the Spice Paste:

    • Heat oil in a wok or skillet over medium heat. Add the spice paste and sauté until fragrant.
  4. Add Additional Seasonings:

    • Incorporate the bay leaf, kaffir lime leaves, and smashed lemongrass into the wok. Continue to sauté until the aromatics are well-blended and softened.
  5. Combine Ingredients:

    • Add the fried chicken fillets to the wok. Stir-fry briefly to mix the chicken with the spice paste. Pour in the water and bring to a simmer.

    • Cook until the water has mostly evaporated and the sauce thickens. Adjust the seasoning with sugar, salt, and flavor enhancer if using.
