Gongso Telur Kriting Ati Ampela is a savory Indonesian dish featuring chicken liver and gizzards, complemented by scrambled eggs and a blend of aromatic spices. This recipe offers a delightful combination of textures and flavors that can be enjoyed as a main course or a hearty side dish.
Ingredients:
- 1/2 kg chicken liver and gizzards (ati ampela ayam)
- 1-2 eggs
- 8 shallots (bawang merah)
- 7 small garlic cloves (bawang putih)
- 4 shallots for boiling (bawang merah)
- 4 garlic cloves for boiling (bawang putih)
- 4 red chilies (cabe merah)
- 6 bird’s eye chilies (cabe rawit merah), adjust to desired spiciness
- 1 cm fresh turmeric (kunyit)
- 2-3 bay leaves (daun salam)
- Salt (to taste)
- Sugar (to taste)
- Masako or other seasoning powder (to taste)
- Oyster sauce (secukupnya)
- Soy sauce (kecap)
- 1/2 tomato
- 1/2 onion (bawang bombay)
- Palm sugar or brown sugar (gula merah/gula jawa/gula aren)
Instructions:

Prepare the Ingredients:
- Begin by peeling and slicing the shallots and garlic. Set aside 4 shallots and 4 garlic cloves for boiling with the chicken liver and gizzards.
- Blend 8 shallots, 7 garlic cloves, red chilies, bird’s eye chilies, and fresh turmeric into a smooth paste.

Boil the Chicken Liver and Gizzards:
- In a pot, bring water to a boil. Add the chicken liver and gizzards along with 4 shallots, 4 garlic cloves, bay leaves, and palm sugar.
- Cook for 5-6 minutes, or until the liver and gizzards are thoroughly cooked and have lost their raw smell. Drain and set aside.

Prepare the Spices:
- Slice the onion and tomato.

Fry the Eggs:
- Heat oil in a pan and scramble the eggs. Once cooked, remove from the pan and set aside.

- In the same pan, add more oil if necessary. Sauté the spice paste (prepared earlier) until fragrant.
- Add the sliced onion and continue to cook until translucent.
- Incorporate the boiled chicken liver and gizzards into the pan. Stir well to combine with the spices.
- Season with oyster sauce, soy sauce, salt, sugar, and seasoning powder to taste.
- Add a small amount of the reserved boiling water to keep the dish moist but not too soupy.
