  • For the spice paste (bumbu halus):
    • 13 small red chilies (cabe rawit, adjust according to your spice preference)
    • 2 large red chilies (cabe merah besar)
    • 1 small tomato
    • 2 cloves garlic
    • 1/2 teaspoon toasted shrimp paste (terasi)
    • Salt and sugar to taste

Instructions:

  1. Prepare the Ingredients:

    • Begin by boiling the rooster and chicken liver until fully cooked. Once cooked, drain and set aside.
    • Heat oil in a pan and fry the chicken and chicken liver until they turn golden brown. (Tip: Cover the pan while frying the chicken liver to prevent oil splatters.)
  2. Make the Spice Paste:

    • In a mortar and pestle (or a blender), grind together the small red chilies, large red chilies, tomato, garlic, and toasted shrimp paste until a smooth paste forms. Add a pinch of salt and sugar to taste.
  3. Cook the Spice Paste:

    • Heat a pan or non-stick skillet over medium heat. Add a little oil and sauté the spice paste until it becomes fragrant and starts to reduce in volume.
  4. Combine Ingredients:

    • Once the spice paste is aromatic and slightly thickened, add a small amount of water to loosen it up. Continue to cook until the water reduces and the paste thickens again.
  5. Add Chicken and Seasonings:

    • Add the fried chicken and chicken liver to the pan. Pour in the sweet soy sauce and season with salt. Stir well to ensure the chicken and liver are evenly coated with the spice paste.
  6. Adjust Flavor:

    • Taste the mixture and adjust seasoning as needed, adding more salt or sugar to balance the flavors.
