Tumis Ayam Jeroan Tahu Cabai Hijau: A Flavorful Indonesian Stir-Fry

Ingredients:

  • 200 grams chicken breast, cut into cubes
  • 200 grams chicken heart and gizzard, cut into pieces
  • 2 pieces tofu, cut into small cubes
  • 1 teaspoon sweet soy sauce (kecap manis)
  • 2 shallots, thinly sliced
  • 1 clove garlic, thinly sliced
  • 1 small onion, thinly sliced
  • 2 red chili peppers, sliced diagonally
  • 4 green chili peppers, sliced diagonally
  • 1 tomato, cut into 8 wedges
  • Salt, to taste
  • Black pepper, to taste
  • 100 ml vegetable oil
  • Chicken stock, to taste

Instructions:

  1. Prepare the Chicken and Offal: Begin by boiling the chicken breast, heart, and gizzard in a pot of water. Season with salt, black pepper, and chicken stock. Cook until fully cooked and tender. Once done, remove from the pot, drain, and set aside.

  2. Sauté the Aromatics: Heat vegetable oil in a pan over medium heat. Add the sliced shallots and garlic, sautéing until they become fragrant and translucent.

  3. Combine Ingredients: Add the boiled chicken, heart, and gizzard to the pan. Stir-fry until the ingredients start to become slightly crispy on the edges.

  4. Add Vegetables: Incorporate the tofu, sliced onion, red chili peppers, and green chili peppers into the pan. Stir well to mix the ingredients, allowing the vegetables to soften slightly.

  5. Season and Flavor: Add the tomato wedges, salt, black pepper, chicken stock powder, and sweet soy sauce. Mix everything together, ensuring that all ingredients are well-coated with the seasoning.

  6. Cook and Serve: Continue to cook until the tomato softens and blends with the other ingredients. Taste and adjust seasoning if needed. Serve hot and enjoy this spicy, savory stir-fry.
