Spicy Indonesian Chicken Rendang with Potato

Title: Indonesian Chicken Rendang

Ingredients:

  • 1 whole chicken, cut into pieces
  • 3 potatoes, peeled and cut into wedges
  • Spice paste:
    • 8 shallots
    • 4 cloves garlic
    • 2 curly red chilies (adjust to taste)
    • 1 turmeric root (about 2 cm)
    • 2 cm ginger
    • 2 candle nuts
    • 1 tsp coriander seeds
    • 1/2 tsp black pepper
    • 1/4 tsp cumin
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 1 lemongrass, bruised
  • 100 ml thick coconut milk
  • Salt and sugar to taste
  • Fried shallots for garnish

Steps:

  1. Prepare the Spice Paste: In a food processor or mortar and pestle, grind together shallots, garlic, red chilies, turmeric, ginger, candle nuts, coriander seeds, black pepper, and cumin until smooth.

  2. Cooking: Heat some oil in a large pot over medium heat. Add the spice paste and sauté until fragrant.

  3. Add Chicken: Add the chicken pieces to the pot, stirring until they change color.

  4. Simmer with Coconut Milk: Pour in the thick coconut milk and enough water to cover the chicken. Reduce the heat to low, cover the pot, and simmer for about 15 minutes.

  5. Add Potatoes: After 15 minutes, add the potato wedges to the pot. Season with salt and sugar to taste. Continue cooking until the chicken and potatoes are tender and the sauce thickens. Adjust seasoning if needed.

  6. Serve: Remove from heat and garnish with fried shallots. Serve hot with steamed rice.
