Tongseng Ayam Recipe

Experience the rich and flavorful taste of Tongseng Ayam, a traditional Indonesian chicken dish that combines tender chicken with a fragrant blend of spices, fresh vegetables, and a creamy coconut milk base. Ingredients:

  • 350 grams chicken (cut into pieces)
  • 4 cloves garlic
  • 3 shallots
  • 4 red bird’s eye chilies
  • 10 additional bird’s eye chilies (optional for extra heat)
  • 3 candlenuts
  • 1 teaspoon ground coriander
  • 1 slice ginger
  • 1 stalk lemongrass (bruised)
  • 1 kaffir lime leaf
  • 2 bay leaves
  • Salt to taste
  • Oil for cooking
  • 1 can (200 ml) coconut milk (preferably Kara brand)
  • 1 piece turmeric (fresh or 1 teaspoon ground turmeric)
  • 1 tomato (cut into wedges)
  • 4 large cabbage leaves (cut into pieces)
  • 1 onion (optional, sliced)

Instructions:

  1. Prepare the Ingredients:

    • Clean the chicken pieces thoroughly and cut them into bite-sized chunks.
    • Wash the cabbage leaves and cut them into large pieces. If using, slice the onion.
  2. Make the Spice Paste:

    • In a blender or food processor, combine the garlic, shallots, red bird’s eye chilies, optional additional chilies, candlenuts, turmeric, and ginger. Blend until smooth to create a spice paste.
  3. Cook the Aromatics:

    • Heat a generous amount of oil in a large pot over medium heat. Add the optional sliced onion (if using) and sauté until it becomes translucent and fragrant.
    • Add the spice paste to the pot along with the bruised lemongrass, kaffir lime leaf, and bay leaves. Sauté until the paste is aromatic and slightly caramelized.
  4. Cook the Chicken:

    • Add the chicken pieces to the pot, stirring well to coat them with the spice paste. Cook until the chicken starts to brown slightly.
  5. Simmer the Dish:

    • Pour in enough water to cover the chicken. Season with salt and ground coriander. Bring the mixture to a boil, then reduce the heat and let it simmer until the chicken is tender and cooked through.
  6. Add Vegetables and Coconut Milk:

    • Once the chicken is tender, add the cabbage pieces and tomato wedges to the pot. Stir gently.
    • Pour in the coconut milk and bring the dish back to a simmer. Cook for a few more minutes until the cabbage is wilted and tender.
  7. Final Adjustments:

    • Adjust the seasoning with additional salt if needed. If you prefer extra heat, add whole bird’s eye chilies at this stage.
  8. Serve:
