Easy Ayam Ungkep: A Flavorful Indonesian Chicken Dish

Ingredients:

  • 6 chicken wings
  • 3 kaffir lime leaves
  • 1 stalk lemongrass
  • 2 bay leaves
  • 3 cm galangal (crushed)
  • Spice Paste:
    • 4 red shallots
    • 1 garlic clove
    • 1 tablespoon coriander seeds
    • 3 cm turmeric
    • 1 stalk lemongrass (white part only)
    • Salt, to taste
    • Sugar, to taste
    • Cooking oil

Instructions:

  1. Prepare the Chicken: Rinse the chicken wings thoroughly and marinate them with lime juice. Allow the chicken to marinate for 15-30 minutes to enhance the flavor.

  2. Prepare the Spice Paste: Slice all the spices to facilitate grinding. Blend the shallots, garlic, coriander seeds, turmeric, and white part of the lemongrass into a smooth paste. Season the paste with salt and sugar to taste.

  3. Cook the Spice Paste: Heat a little cooking oil in a pan over medium heat. Add the spice paste and sauté until it becomes fragrant and the oil starts to separate from the paste.

  4. Combine Ingredients: Add the marinated chicken wings to the pan. Stir in the kaffir lime leaves, bay leaves, crushed galangal, and the stalk of lemongrass. Mix well to ensure that the chicken is evenly coated with the spice paste.

  5. Simmer: Pour in about a glass of water (or enough to just cover the chicken) and bring to a simmer. Cover the pan and let it cook until the chicken is tender and the water has mostly evaporated, leaving a thick, flavorful coating.

  6. Final Steps: Once the chicken is cooked and the sauce has thickened, remove from heat. Transfer the chicken to a container and refrigerate. When ready to serve, simply fry the chicken until crispy and golden.
