Indonesian Tongseng Ayam Tahu Recipe

Ingredients:

  • 500 grams chicken, cut into small pieces
  • 2 blocks firm tofu, cut into cubes and fried halfway through
  • 500 ml coconut milk (preferably Kara brand, diluted with water if necessary)
  • 1 stalk lemongrass
  • Salt, to taste
  • Sugar, to taste
  • MSG (optional), to taste

Spice Paste:

  • 5 shallots
  • 5 cloves garlic
  • 2 red chilies
  • 4 bird’s eye chilies (adjust to taste for spiciness)
  • 2 candlenuts

Garnish:

  • Fried shallots, for topping

Instructions:

  1. Prepare the Spice Paste: Grind shallots, garlic, red chilies, bird’s eye chilies, and candlenuts into a smooth paste.

  2. Cooking: Heat some oil in a pan and sauté the spice paste until fragrant. Add the lemongrass and continue sautéing until aromatic.

  3. Add Chicken: Put the chicken into the pan and stir-fry until the chicken is cooked through and slightly moist.

  4. Pour Coconut Milk: Pour in the coconut milk. Stir well and let it simmer until the chicken is tender and the flavors are absorbed.

  5. Add Tofu: Add the fried tofu cubes into the pan. Cook until the tofu absorbs the flavors and becomes tender.

  6. Seasoning: Adjust the taste with salt, sugar, and MSG (if using), according to your preference.

  7. Final Touch: Once the chicken is tender and the sauce has thickened to your liking, remove from heat.

  8. Serve: Garnish with fried shallots on top. Tongseng Ayam Tahu is best enjoyed hot with steamed rice.
