Spicy Chicken Opor Recipe

Ingredients:

  • 6 pieces of chicken, cut into portions
  • 7 shallots
  • 3 cloves of garlic
  • 1 turmeric root
  • 3 candlenuts
  • 1 lemongrass (bruised)
  • 1 kaffir lime leaf
  • A knob of ginger (bruised)
  • Ground spices: coriander, black pepper, ground red chili, salt, sugar
  • Thick and thin coconut milk

Instructions:

  1. Prepare the Spice Paste:

    • Grind or blend together shallots, turmeric, garlic, candlenuts, coriander, black pepper, and ground red chili until smooth.
  2. Sauté the Spice Paste:

    • Heat some oil in a pan and sauté the blended spice paste until fragrant.
  3. Add Aromatic Ingredients:

    • Add bruised lemongrass, kaffir lime leaf, and ginger to the pan. Stir fry briefly until fragrant.
  4. Cook the Chicken:

    • Add the chicken pieces to the pan and stir fry briefly until they are lightly browned.
  5. Cooking with Coconut Milk:

    • Pour in the thin coconut milk and bring to a simmer. Cook until the chicken is tender.
  6. Add Thick Coconut Milk:

    • Once the chicken is cooked through, add the thick coconut milk. Stir well and bring to a boil.
  7. Final Seasoning:

    • Season with salt and sugar according to taste. Adjust the spiciness with more ground red chili if desired.

    • Garnish with sliced shallots on top before serving.
