Spicy Coconut Milk Dory Fish

Ingredients:

  • 2 fillets of dory fish, cut into preferred sizes
  • Salt, to taste
  • Sugar, to taste
  • Ground black pepper, to taste
  • 150 ml thick coconut milk

Spice Paste:

  • 7 shallots
  • 3 cloves garlic
  • 2 large green chilies
  • 2 large red chilies
  • 15 green bird’s eye chilies (optional for extra spiciness)
  • 1 turmeric root
  • 3 kaffir lime leaves

Instructions:

  1. Prepare the spice paste by grinding shallots, garlic, green chilies, red chilies, bird’s eye chilies (if using), turmeric, and kaffir lime leaves until smooth.

  2. Heat some oil in a pan and sauté the spice paste until fragrant. Add the kaffir lime leaves and stir briefly.

  3. Pour in the thick coconut milk, stir well, and let it simmer until it starts to boil. Reduce the heat to low.

  4. Season with salt, sugar, and ground black pepper according to your taste preference. Stir until everything is well combined.

  5. Carefully place the dory fish fillets into the simmering coconut milk mixture. Cover the pan and let it cook over low heat for approximately 10 minutes.

  6. Gently flip the fish fillets to cook the other side. Cover again and continue cooking over low heat for another 10 minutes or until the fish is cooked through and tender.

  7. Once done, turn off the heat and transfer the spicy coconut milk dory fish to a serving plate.
