Ayam Geprek: Indonesian Spicy Fried Chicken

Ingredients:

  • 300 grams of chicken, pre-cooked (ungkep)
  • 22 red chilies (rawit merah)
  • 1 clove garlic
  • Salt and sugar to taste
  • Cooking oil for frying

Instructions:

  1. Fry the Chicken: Heat oil in a pan over medium heat. Fry the pre-cooked chicken pieces until they are crispy and golden brown. Remove the chicken from the pan and let it drain on paper towels to remove excess oil.

  2. Prepare the Sambal: While the chicken is frying, prepare the sambal. In a mortar and pestle (cobek), pound together the red chilies and garlic until you achieve a coarse paste. Add salt and sugar to taste.

  3. Heat the Oil: Pour a little of the hot oil used for frying the chicken into the sambal mixture. This will help to release the flavors and add a rich, aromatic quality to the sambal. Mix well and adjust the seasoning as needed.

  4. Assemble the Dish: Place the fried chicken pieces on a serving plate. Using the back of a spoon or a pestle, gently crush the chicken pieces to slightly flatten them. Spoon the prepared sambal over the top of the chicken.

  5. Serve: Your Ayam Geprek is now ready to be enjoyed. Serve it hot with steamed rice and a side of vegetables for a complete meal.
