Ayam Goreng Setan: A Spicy Indonesian Fried Chicken Delight

Ingredients:

For the Chicken Boil:

  • 1 whole chicken, cut into pieces
  • 1 eggplant, cut into cubes
  • 7 cloves garlic
  • 1 tablespoon coriander
  • Water (enough to cover the chicken)

For the Spicy Sambal:

  • 30 large red chilies
  • 2 shallots
  • 1 clove garlic
  • A pinch of turmeric
  • A pinch of salt
  • 1 seasoning cube (Royco)
  • 3 tablespoons vegetable oil

Instructions:

  1. Prepare the Chicken:

    • Begin by making the boiling spice paste. Blend together garlic and coriander until finely ground.
    • In a large pot, combine the ground spice paste with enough water to cover the chicken. Add the chicken pieces and bring to a boil.
    • Let the chicken simmer until cooked through, ensuring it absorbs the flavors of the spices.
  2. Prepare the Sambal:

    • While the chicken is cooking, prepare the sambal. Blend the large red chilies, shallots, garlic, turmeric, and salt into a smooth paste.
    • Heat 3 tablespoons of vegetable oil in a pan. Once hot, add the sambal paste and sauté until fragrant and the oil begins to separate from the paste.
  3. Fry the Eggplant:

    • Coat the eggplant cubes lightly with salt. Heat some oil in a pan and fry the eggplant cubes until they turn golden brown. Set them aside to drain on paper towels.
  4. Fry the Chicken:

    • Once the chicken is cooked, remove it from the pot and drain excess water. Heat a fresh batch of oil in a frying pan.
    • Fry the chicken pieces until they are crispy and golden brown. Remove and drain excess oil on paper towels.
  5. Combine and Serve:

    • Reduce the amount of oil in the pan, leaving just a small amount. Add the prepared sambal to the pan and stir well.
    • Add the fried chicken and eggplant cubes into the pan with the sambal. Stir and coat them evenly with the sambal mixture. Adjust the seasoning with a bit of Royco if desired.
    • Once everything is well combined and heated through, transfer the chicken and eggplant to a serving dish.
