Telur Kentang Balado: A Spicy Indonesian Delight

Ingredients:

  • 4 chicken eggs
  • 2 medium potatoes
  • 5 red chilies
  • 7 shallots
  • 5 cloves garlic
  • Bird’s eye chilies (to taste)
  • 3 candlenuts
  • Salt, to taste
  • Sugar, to taste

Instructions:

  1. Prepare the Eggs and Potatoes: Start by boiling the chicken eggs until they are fully cooked. While the eggs are boiling, peel and dice the potatoes. Heat oil in a pan and fry the diced potatoes until they are golden brown and crispy. Once the eggs are done boiling, peel them and fry them in the same pan until they develop a nice, golden-brown crust.

  2. Make the Spice Paste: While the eggs and potatoes are cooking, prepare the spice paste. In a mortar and pestle, grind together the shallots, garlic, red chilies, bird’s eye chilies (adjust the amount based on your heat preference), and candlenuts, adding a pinch of salt to taste. If you do not have a mortar and pestle, you can use a food processor to blend these ingredients into a smooth paste.

  3. Cook the Spice Paste: In a separate pan, heat a bit of oil over medium heat. Add the ground spice paste to the pan and sauté until it becomes fragrant and slightly caramelized. Add a splash of water to the paste to create a sauce, and cook until the mixture starts to bubble and thicken.

  4. Combine Ingredients: Once the spice paste is cooked, add the fried potatoes and eggs to the pan. Stir well to coat the potatoes and eggs with the spicy sauce. Season with additional salt and sugar to taste, ensuring the flavors are well-balanced and without the need for MSG.

  5. Simmer and Serve: Continue cooking the mixture, stirring occasionally, until everything is well-coated with the sauce and heated through. The potatoes should be tender, and the eggs should have absorbed some of the flavors from the sauce. Adjust seasoning as necessary before serving.

  6. Enjoy: Serve the Telur Kentang Balado warm as a flavorful main dish or a side. It pairs wonderfully with steamed rice and can be enjoyed as part of a larger Indonesian-inspired meal.
