Telor Sambal Balado

Ingredients:

  • 5 eggs (hard-boiled)
  • 3 blocks of tofu (cubed)
  • 1 kaffir lime leaf (finely sliced)
  • Salt (to taste)
  • Sugar (to taste)
  • Chicken seasoning powder (to taste)

For the Spice Paste:

  • 10 red chilies (adjust according to your heat preference)
  • 4 cloves of garlic
  • 4 shallots
  • 3 candlenuts

Instructions:

  1. Prepare the Eggs and Tofu:

    • Heat oil in a frying pan over medium heat. Once hot, carefully fry the hard-boiled eggs until they are golden brown and crispy on the outside. Remove and drain on paper towels.
    • In the same pan, fry the cubed tofu until it turns golden brown. Remove and set aside.
  2. Prepare the Spice Paste:

    • Using a food processor or mortar and pestle, blend together the red chilies, garlic, shallots, and candlenuts until you achieve a smooth paste.
  3. Cook the Spice Paste:

    • Heat a small amount of oil in a pan over medium heat. Add the spice paste and sauté until it becomes fragrant and the oil starts to separate from the paste.
  4. Simmer the Spice Paste:

    • Add a splash of water to the pan with the spice paste and bring it to a boil. Allow it to simmer for a few minutes until the flavors meld together and the mixture thickens slightly.
  5. Combine Ingredients:

    • Gently add the fried eggs and tofu into the pan with the spice paste. Stir well to ensure the eggs and tofu are evenly coated with the paste.
    • Add the finely sliced kaffir lime leaf to the pan.
  6. Season and Finish:

    • Season with salt, sugar, and chicken seasoning powder according to your taste preferences. Continue to cook until the liquid reduces and the sauce clings nicely to the eggs and tofu.
    • Taste and adjust seasoning if needed.
  7. Serve:

    • Once the sauce has thickened and the eggs and tofu are well-coated, remove from heat.
    • Serve hot as a main dish or side dish with steamed rice.
