Spicy Indonesian Egg and Tofu Stir-Fry (Telur Sambalado)

Telur Sambalado: A Flavorful Indonesian Delight

Ingredients:

  • 1/2 kg eggs, boiled and lightly fried
  • 2 pieces tofu, cut into triangles and fried
  • Salt, sugar, and mushroom seasoning to taste
  • 1 lemongrass stalk, smashed
  • 1 bay leaf
  • 1 kaffir lime leaf
  • Cooking oil for sautéing

For the Spice Paste:

  • 4 shallots
  • 2 garlic cloves
  • 1 candlenut
  • 2 red chilies, seeds removed

Instructions:

  1. Prepare the Spice Paste: Start by blending the shallots, garlic, candlenut, and red chilies into a smooth paste. You can use a food processor or mortar and pestle for this.

  2. Sauté the Spice Paste: Heat a generous amount of cooking oil in a pan over medium heat. Add the spice paste and sauté until it becomes aromatic and starts to release its oil.

  3. Add Aromatics: To the pan, add the kaffir lime leaf, bay leaf, and smashed lemongrass. Stir well and add a splash of water to help the flavors meld together.

  4. Combine Ingredients: Once the spice paste is fragrant and the oil has separated, gently add the previously boiled and fried eggs along with the fried tofu triangles. Stir carefully to coat the eggs and tofu evenly with the spice mixture.

  5. Adjust Seasoning: Taste the dish and adjust the seasoning with salt, sugar, and mushroom seasoning to your preference. Continue to cook for a few more minutes until everything is well-coated and heated through.

  6. Serve: Remove from heat and optionally garnish with fried shallots for added crunch and flavor. Serve hot with steamed rice.
