Ingredients:

  • Eggs: 250 grams (approximately 5-6 medium eggs), boiled and peeled
  • Lontong (Compressed Rice Cake): Enough to serve (store-bought or homemade)
  • Coconut Milk: 2 cups
  • Galangal: 2 cm piece
  • Lemongrass: 2 stalks, bruised
  • Bay Leaf: 1 leaf

For the Spice Paste:

  • Garlic: 3 cloves
  • Shallots: 3 cloves
  • Candlenuts: 3 nuts
  • Coriander Seeds: ½ teaspoon
  • Turmeric: 2 cm piece, peeled
  • Bird’s Eye Chili: 8 chilies (adjust to taste)
  • Salt and Sugar: To taste

To Garnish:

  • Fried Shallots: As needed
  • Prawn Crackers: As needed

Instructions:

  1. Prepare the Spice Paste:

    • Wash all the spices and ingredients for the paste thoroughly.
    • In a mortar and pestle, grind the garlic, shallots, candlenuts, coriander seeds, turmeric, and bird’s eye chilies into a smooth paste. Alternatively, you can use a blender for a finer texture.
