- Lontong (Compressed Rice Cake): Enough to serve (store-bought or homemade)
- Coconut Milk: 2 cups
- Galangal: 2 cm piece
- Lemongrass: 2 stalks, bruised
- Bay Leaf: 1 leaf
For the Spice Paste:

- Coriander Seeds: ½ teaspoon
- Turmeric: 2 cm piece, peeled
- Bird’s Eye Chili: 8 chilies (adjust to taste)
- Salt and Sugar: To taste
To Garnish:
- Fried Shallots: As needed
- Prawn Crackers: As needed
Instructions:
-
Prepare the Spice Paste:
- Wash all the spices and ingredients for the paste thoroughly.
- In a mortar and pestle, grind the garlic, shallots, candlenuts, coriander seeds, turmeric, and bird’s eye chilies into a smooth paste. Alternatively, you can use a blender for a finer texture.
-
Cook the Spice Paste:
- Heat a little oil in a pan over medium heat.
- Add the ground spice paste along with the bruised galangal, lemongrass, and bay leaf.
- Sauté the mixture until it becomes fragrant and the oil begins to separate from the paste.
-
Add the Boiled Eggs:
- Gently add the boiled eggs to the pan.
- Stir and cook the eggs in the spice mixture, ensuring they are well-coated with the paste.
-
Add the Coconut Milk:
- Pour in the coconut milk and stir well.
- Reduce the heat to low and let the curry simmer, allowing the flavors to meld and the sauce to thicken slightly.
- Stir occasionally and cook until the curry reaches your desired consistency.
-
Serve:
- Slice the lontong into serving pieces and arrange them on plates.
- Spoon the spicy egg curry over the lontong.
- Garnish with fried shallots for added texture and flavor.
-
Optional:
- Serve with prawn crackers on the side for extra crunch.
