Telur Balado: A Delightful Indonesian Spicy Egg Dish

Ingredients:

  • 7 boiled eggs, lightly fried
  • 4 shallots, finely sliced
  • 2 cloves of garlic, finely sliced
  • 1 large tomato, chopped
  • 2 bay leaves
  • 1 piece of galangal (laos), bruised
  • 1 piece of palm sugar
  • Salt to taste
  • 1 cup of water
  • Cooking oil for frying

Spice Paste (Bumbu Halus):

  • 4 large red chilies
  • 3 candlenuts (kemiri)
  • 1 clove of garlic
  • A small piece of galangal

Instructions:

  1. Prepare the Spice Paste: In a mortar or a food processor, grind the red chilies, candlenuts, garlic, and a small piece of galangal into a smooth paste. Set aside.

  2. Sauté the Aromatics: Heat a small amount of oil in a pan over medium heat. Add the sliced garlic and shallots, sautéing until they become fragrant and translucent. Add the bay leaves and bruised galangal, and continue to sauté until the aromatics are well infused.

  3. Cook the Spice Paste: Add the prepared spice paste to the pan, stirring continuously. Cook until the paste turns aromatic and the oil begins to separate from the spices.

  4. Simmer with Water: Gradually pour in the water, a little at a time, stirring well after each addition. This helps to develop a rich and balanced sauce. Once all the water is added, bring the mixture to a simmer.

  5. Add the Eggs: Pierce the boiled eggs with a fork to allow the flavors to penetrate. Carefully place the eggs into the simmering sauce, ensuring they are well coated. Add the chopped tomato, salt, and palm sugar.

  6. Adjust the Seasoning: Allow the eggs to simmer in the sauce, stirring occasionally, until the sauce thickens and the eggs are fully infused with the flavors. Taste and adjust the seasoning with more salt or sugar as needed.

  7. Serve and Enjoy: Once the eggs are well-coated and the sauce has reached your desired consistency, remove from heat. Serve the Telur Balado hot with steamed rice.
