Telur Dadar Balado

This vibrant and flavorful Telur Dadar Balado recipe brings together the comforting richness of eggs with a spicy, aromatic balado sauce. Perfect for those who enjoy a kick of heat in their meals, this dish features a blend of shallots, garlic, and red chilies, simmered together with aromatic herbs. Here’s how to prepare this Indonesian-inspired dish:

Ingredients

  • 6 large eggs
  • 5 shallots
  • 4 cloves of garlic
  • 10 red curly chilies
  • 4 bird’s eye chilies (adjust to taste)
  • 3 bay leaves
  • 2 kaffir lime leaves
  • Salt, to taste
  • 2 medium tomatoes
  • Sugar, to taste (optional, omit if you prefer less sweetness)
  • Water, as needed
  • Cooking oil

Instructions

  1. Prepare the Eggs: Crack the eggs into a bowl and beat them until well combined. Heat a non-stick skillet over medium heat, add a bit of oil, and pour in the beaten eggs. Cook until set, then flip to cook the other side. Once fully cooked, transfer to a plate and set aside.

  2. Make the Spice Paste: In a blender, combine the shallots, garlic, red curly chilies, bird’s eye chilies, and tomatoes. Blend until you achieve a smooth paste.

  3. Cook the Paste: Heat a generous amount of cooking oil in a pan over medium heat. Add the blended spice paste and sauté until the mixture becomes fragrant and the oil starts to separate from the paste.

  4. Add Herbs and Seasoning: Incorporate the bay leaves, kaffir lime leaves, and salt into the pan. Continue to cook, allowing the leaves to wilt and the flavors to meld together. If you like a hint of sweetness, add a little sugar at this stage.

  5. Combine with Egg: Gently fold in the pre-cooked egg omelet into the spicy mixture. Stir carefully to coat the eggs with the sauce, ensuring that they are evenly mixed. Avoid cooking for too long to prevent the eggs from becoming too dry.

  6. Serve: Once the eggs are well coated and the sauce has been absorbed, remove from heat. Transfer the Telur Dadar Balado to a serving dish and enjoy it hot.

This dish is a wonderful way to enjoy a spicy, savory twist on a classic egg preparation. Serve it alongside steamed rice for a complete meal that’s sure to delight your taste buds.
