Ingredients:

  • 500 grams fish roe (tengiri)
  • 8 shallots (bawang merah)
  • 4 cloves garlic (bawang putih)
  • 5-inch piece of ginger (jahe)
  • 5-inch piece of turmeric (kunyit)
  • 1/4 teaspoon black pepper (merica)
  • 1/4 teaspoon coriander (ketumbar)
  • 1 teaspoon salt (garam)
  • 1/2 piece of palm sugar or 1 teaspoon granulated sugar
  • 1 lemongrass stalk (serai)
  • 1 bay leaf (daun salam)
  • 1 piece of galangal (laos)
  • 7 bird’s eye chilies (cabai rawit)
  • 3 large red chilies (cabai merah besar)
  • 5 candlenuts (kemiri)
  • Oil for sautéing

Instructions:

  1. Prepare the Fish Roe:

    • In a pot, bring a small amount of water to a boil with a pinch of salt and a splash of lime juice.
    • Add the fish roe and cook for 15 minutes until firm.
    • Remove from the pot, let cool slightly, and then cut into bite-sized pieces.
  2. Make the Spice Paste:

    • In a blender or food processor, combine the shallots, garlic, ginger, turmeric, salt, bird’s eye chilies, red chilies, candlenuts, black pepper, and coriander. Blend until smooth.
  3. Cook the Spice Paste:

    • Heat a generous amount of oil in a pan over medium heat.
    • Add the spice paste to the pan and sauté until fragrant and golden brown.
    • Stir in the lemongrass, bay leaf, galangal, and palm sugar. Continue to cook, adding a bit of water if needed to prevent burning.
  4. Combine and Simmer:

    • Add the cooked fish roe to the pan with the sautéed spice paste.
    • Stir well to coat the fish roe with the spices.
    • Allow the mixture to simmer, stirring occasionally, until the flavors are well combined and the fish roe is infused with the spicy sauce.
  5. Serve:

    • Once the dish is well-cooked and the spices have melded with the fish roe, remove from heat.
    • Transfer to a serving dish and enjoy this flavorful Indonesian specialty.

This Rica Rica Telor Ikan is an excellent choice for those seeking a taste of Indonesian cuisine, offering a deliciously spicy kick that pairs wonderfully with steamed rice. Enjoy!
