Ayam Goreng Ungkep
Ingredients:
- 1 whole chicken, cut into 12 pieces
- Water, as needed
- Sugar, to taste
Spice Paste:
- 7 cloves of garlic
- 5 shallots
- 1 inch turmeric
- 1 inch ginger
- 3 candlenuts
- Coriander, to taste
- Salt, to taste
Additional Ingredients:
- 2 pieces of galangal, bruised
- 1 stalk of lemongrass, bruised
- 3 kaffir lime leaves
- 2 bay leaves

Prepare the Spice Paste:
Blend together the garlic, shallots, candlenuts, coriander, ginger, turmeric, and salt until you have a smooth paste. Bruise the galangal, lemongrass, kaffir lime leaves, and bay leaves. -
Marinate the Chicken:
Ensure the chicken pieces are clean. Rub the spice paste thoroughly onto the chicken pieces. Transfer the chicken into a pot. Rinse the leftover spice paste in the mortar with a bit of water and add this to the pot as well. Add sugar to taste. -
Cook the Chicken:
Simmer the chicken over medium heat for about 15 minutes. The chicken will release its juices during this process, so you may not need to add much additional water. After 15 minutes, stir the chicken to ensure even coating with the spices and taste for seasoning. Continue to simmer until the liquid reduces and thickens. -
Store or Serve:
Once the chicken is cooked and the liquid has evaporated, you can store the chicken in an airtight container and refrigerate. When ready to serve, fry the chicken pieces until golden and crispy. The crispy spice remnants are delightful when mixed with rice.
