Balado Telor Ceplok: Indonesian Spicy Fried Eggs

Ingredients:

  • 5 large eggs
  • For the spice paste:
    • 10 red chili peppers
    • 5 shallots
    • 1 clove garlic
    • 1 tomato (diced)
  • Sweet soy sauce (for serving)
  • Salt to taste
  • Chicken bouillon powder (optional)
  • Flavor enhancer (optional)

Instructions:

  1. Prepare the Eggs: Heat a skillet over medium heat and fry each egg individually until cooked to your preference. Remove the eggs from the skillet and set them aside.

  2. Make the Spice Paste: In a mortar and pestle or a food processor, grind the red chili peppers, shallots, and garlic into a smooth paste.

  3. Cook the Spice Paste: In the same skillet used for frying the eggs, add a little oil if needed and sauté the ground spice paste until fragrant and well-cooked.

  4. Add Tomato: Incorporate the diced tomato into the skillet with the spice paste. Continue to cook until the tomatoes are softened and the mixture becomes aromatic.

  5. Simmer the Sauce: Add a splash of water to the skillet to create a sauce base. Season with salt, chicken bouillon powder, and a flavor enhancer if desired. Stir well to combine and let the mixture simmer gently.

  6. Combine with Eggs: Return the fried eggs to the skillet, gently stirring to coat them with the spicy sauce. Allow the eggs to simmer in the sauce for a few minutes, letting them absorb the flavors.

  7. Serve: Adjust seasoning as needed, and serve the Balado Telor Ceplok with a drizzle of sweet soy sauce if desired.
