- 1 scallion, cut into 1 cm pieces

- Seasoning (e.g., Royco), to taste

- 2 shallots
- 2 cloves garlic
- 3 red chilies
- 2 bird’s eye chilies (for extra heat, if desired)
- 1/2 inch piece of kencur (aromatic root)
