Telor Ceplok Balado Recipe

Ingredients:

  • 6 large eggs
  • 1 onion, sliced
  • 1 scallion, cut into 1 cm pieces
  • Sugar, to taste
  • Salt, to taste
  • Seasoning (e.g., Royco), to taste
  • Water, as needed

For the Spice Paste:

  • 2 shallots
  • 2 cloves garlic
  • 3 red chilies
  • 2 bird’s eye chilies (for extra heat, if desired)
  • 1/2 inch piece of kencur (aromatic root)

Instructions:

  1. Prepare the Eggs: Heat a non-stick pan over medium heat. Fry the eggs without adding salt or just a pinch of salt until they are cooked to your desired level. Remove the eggs from the pan and set aside.

  2. Make the Spice Paste: In a blender or food processor, combine shallots, garlic, red chilies, bird’s eye chilies (if using), and kencur. Blend into a smooth paste.

  3. Cook the Aromatics: In the same pan used for frying the eggs, add a little oil. Sauté the spice paste, sliced onion, and scallion until fragrant and the onions are translucent.

  4. Combine Ingredients: Add a splash of water to the pan, along with sugar, salt, and seasoning to taste. Stir well to combine.

  5. Simmer the Eggs: Return the fried eggs to the pan, ensuring they are coated with the spice mixture. Allow the dish to simmer until the sauce thickens and the flavors meld together.

  6. Adjust Seasoning: Taste and adjust seasoning as needed.

  7. Serve: Once the dish is ready, transfer it to a serving plate and enjoy your Telor Ceplok Balado warm with steamed rice.
