  • 1 teaspoon salt
  • 1 teaspoon beef bouillon powder
  • 2 teaspoons sugar (adjust to taste; the sweetness balances the spiciness)
  • Cooking oil, as needed
  • Water, as needed

Instructions:

  1. Prepare the Eggs:

    • Heat a generous amount of oil in a frying pan over medium heat. Once hot, carefully fry the eggs until they are golden and crispy. Remove the eggs from the oil and drain on paper towels. Set aside.
  2. Make the Spice Paste:

    • In a blender or food processor, combine the red shallots, garlic, red chilies, bird’s eye chilies, and ripe tomato. Blend into a smooth paste.

    • Gently add the fried eggs to the sambal sauce. Stir to coat the eggs evenly with the sauce. Allow the eggs to simmer in the sauce for a few minutes, so they absorb the flavors.
