Ingredients
| Amount | Ingredient |
|---|---|
| 1 lb | Green beans |
| 3 | Hot chili peppers 🌶️ |

| 1 | Bay leaf |
| 1 | Onion |
| 1 cup | Water |
| 1/4 cup | Fresh bean sprouts |

| 1 1/2 tbsp | Cooking oil |
Instructions
-
Prep Ingredients: - Wash the green beans and trim off the ends.
- Finely chop the hot chili peppers 🌶️ after removing the seeds for less heat.
- Peel and grate the fresh ginger.
- Slice the onion thinly.

-
Sauté Aromatics: - Heat a wok or large skillet over medium-high heat.
- Add the cooking oil and swirl to coat the pan.
- Toss in the hot chili peppers 🌶️ and grated ginger, stirring constantly for about 1 minute until fragrant.

-
Add Onions & Green Beans: - Add the sliced onions and trimmed green beans to the wok.
- Continue to sauté for about 2 minutes until the onions are translucent and the green beans are slightly tender.

-
Simmer with Flavor: - Pour in the water and sprinkle with salt.
- Place the bay leaf into the mixture for a burst of flavor.
- Cover the wok with a lid and reduce the heat to low.
- Allow it to simmer gently for 4 minutes, letting the flavors meld and the beans cook through.

-
Finish with Bean Sprouts: - Remove the lid and add the fresh bean sprouts.
- Stir everything together gently, cover again, and simmer for an additional 1 minute.
- This quick cooking time helps the bean sprouts maintain their crunch while absorbing the delicious flavors of the dish.

-
Serve and Enjoy: - Remove the bay leaf before serving.
- Spoon the Indonesian Green Beans with Ginger & Chili onto a serving platter.
- Enjoy this vibrant and spicy dish on its own, or serve it over steamed rice 🍚 or noodles 🍜 for a complete meal.
