Description

Make these hot or mild, it’s up to you. If you’re feeling adventurous, use jalapenos for a spicier kick, or dial it down with just a couple of red hot chilies. This dish pairs wonderfully with marinated baked tofu, making it a satisfying and flavorful meal.

Ingredients

Amount Ingredient
1 lb Green beans
3 Hot chili peppers 🌶️
1 Fresh ginger (thumb-sized)
1 Bay leaf
1 Onion
1 cup Water
1/4 cup Fresh bean sprouts
1/2 tsp Salt
1 1/2 tbsp Cooking oil

Instructions

  1. Prep Ingredients:

    • Wash the green beans and trim off the ends.
    • Finely chop the hot chili peppers 🌶️ after removing the seeds for less heat.
    • Peel and grate the fresh ginger.
    • Slice the onion thinly.
  2. Sauté Aromatics:

    • Heat a wok or large skillet over medium-high heat.
    • Add the cooking oil and swirl to coat the pan.
    • Toss in the hot chili peppers 🌶️ and grated ginger, stirring constantly for about 1 minute until fragrant.
  3. Add Onions & Green Beans:

    • Add the sliced onions and trimmed green beans to the wok.
    • Continue to sauté for about 2 minutes until the onions are translucent and the green beans are slightly tender.
  4. Simmer with Flavor:

    • Pour in the water and sprinkle with salt.
    • Place the bay leaf into the mixture for a burst of flavor.
    • Cover the wok with a lid and reduce the heat to low.
    • Allow it to simmer gently for 4 minutes, letting the flavors meld and the beans cook through.
  5. Finish with Bean Sprouts:

    • Remove the lid and add the fresh bean sprouts.
    • Stir everything together gently, cover again, and simmer for an additional 1 minute.
    • This quick cooking time helps the bean sprouts maintain their crunch while absorbing the delicious flavors of the dish.
  6. Serve and Enjoy:

    • Remove the bay leaf before serving.
    • Spoon the Indonesian Green Beans with Ginger & Chili onto a serving platter.
    • Enjoy this vibrant and spicy dish on its own, or serve it over steamed rice 🍚 or noodles 🍜 for a complete meal.
