Ayam Cabe Hijau (Lado Mudo) Recipe

Ingredients:

  • 1 kg chicken, cleaned and marinated with lime juice
  • 5 bay leaves
  • 5 kaffir lime leaves
  • 2 stalks lemongrass, bruised
  • 1 cup coconut milk (Kara brand or similar)
  • Salt and seasoning to taste

For the Ground Spices:

Spice Mix A:

  • 1/4 cup curly green chilies
  • 15 shallots
  • 15 garlic cloves

Spice Mix B:

  • 5 candlenuts
  • 2 segments galangal
  • 2 segments ginger
  • 2 segments turmeric

Instructions:

  1. Prepare the Spice Mixes: Begin by blending Spice Mix A (curly green chilies, shallots, and garlic) into a smooth paste. Set aside. Next, blend Spice Mix B (candlenuts, galangal, ginger, and turmeric) into a separate paste.

  2. Cook the Spices: Heat a little oil in a pan and sauté the blended Spice Mix A until fragrant. Remove a portion of this sautéed mixture and set it aside for later.

  3. Combine Ingredients: Add the blended Spice Mix B to the pan with the remaining sautéed Spice Mix A. Cook until aromatic and well-blended.

  4. Add Chicken and Aromatics: Introduce the chicken pieces, kaffir lime leaves, bay leaves, and bruised lemongrass to the pan. Stir well to coat the chicken with the spices. Cook for about 15 minutes, allowing the flavors to meld.

  5. Incorporate Coconut Milk: Pour in the coconut milk, stirring to combine. Simmer until the chicken is tender and the coconut milk has reduced to a thick, creamy sauce.

  6. Finish the Dish: Add the portion of sautéed green chilies that was set aside earlier. Adjust seasoning with salt and additional seasoning to taste.

  7. Serve: Once the chicken is fully cooked and the flavors have melded together, remove from heat. Serve hot with your favorite side dishes.

Tips:

  • For added heat, you can include extra bird’s eye chilies or adjust the amount of green chilies in Spice Mix A according to your spice preference.
  • If you prefer a smoother sauce, you can blend the coconut milk with the spices before adding it to the pan.
