- 10 shallots
- 6 garlic cloves
- 1 thumb-sized piece of turmeric

- Sufficient water, for boiling
- 1/4 kg green chilies
- 10 red bird’s eye chilies
- 5 kaffir lime leaves

Prepare the Chicken: Begin by grinding 5 shallots, 3 garlic cloves, and the turmeric into a paste. Bring water to a boil in a pot, then add the ground spice paste, bay leaves, lemongrass, and ground coriander. Place the chicken thighs into the pot and season with salt. Allow the mixture to simmer until the chicken is tender. Once cooked, drain the chicken and set it aside.

Prepare the Chili Paste: Boil the green chilies, red bird’s eye chilies, and the remaining shallots and garlic until they are softened. Drain the vegetables, then blend them into a rough paste (alternatively, you can grind them). Set aside.
