Ayam Goreng Cabe Hijau: A Delightful Indonesian Chicken Dish

Ingredients:

  • 1/2 chicken (cut into pieces)
  • 15 large mild green chilies
  • 1 large onion, sliced lengthwise
  • 4 shallots
  • 3 cloves garlic
  • 3 bay leaves
  • 3 kaffir lime leaves
  • 1 lime
  • 1 clove turmeric (or 1 teaspoon turmeric powder)
  • Salt to taste
  • Sugar to taste
  • Cooking oil for frying

Instructions:

  1. Prepare the Chicken: Start by washing the chicken thoroughly. Rub the chicken pieces with the juice of one lime and let it marinate for 15 minutes. For a richer flavor and a slightly darker color, you can also coat the chicken with a mixture of ground turmeric and salt.

  2. Fry the Chicken: Heat oil in a pan over medium heat. Fry the chicken pieces until they turn golden brown and crispy. Once done, remove the chicken from the oil and drain on paper towels.

  3. Make the Spice Paste: While the chicken is frying, prepare the spice paste. In a blender, combine the shallots, garlic, and green chilies. Blend until you get a smooth paste.

  4. Cook the Spice Paste: Heat a bit of oil in a separate pan. Add the blended spice paste and sauté until fragrant. Add the bay leaves and kaffir lime leaves, then pour in a little water to help with cooking.

  5. Combine Chicken and Paste: Add the fried chicken pieces to the pan with the spice paste. Add the sliced onion, and season with sugar and salt to taste. Stir well to ensure the chicken is coated with the spice mixture.

  6. Simmer: Allow the mixture to cook until the liquid reduces and the flavors meld together, adjusting seasoning as needed.

  7. Serve: Once the sauce has thickened and the chicken is well coated, remove from heat. Serve the Ayam Goreng Cabe Hijau hot with steamed rice or your favorite side dishes.
