Spicy Indonesian Jengkol and Potato Stew with Egg

Balado Takoler (Potatoes, Jengkol, and Eggs)

Ingredients:

  • 2 large eggs
  • 1/4 kg baby potatoes
  • 1/4 kg jengkol (a type of Indonesian legume; can substitute with another legume or bean if unavailable)
  • 1 ripe tomato
  • 4 red chili peppers
  • 15 bird’s eye chilies (adjust to taste for spiciness)
  • 4 shallots
  • 1 stalk lemongrass
  • 2 bay leaves
  • Cooking oil
  • Palm sugar (to taste)
  • Salt (to taste)
  • Ground black pepper (to taste)

Instructions:

  1. Prepare the Ingredients:

    • Begin by boiling the eggs and baby potatoes in a pot for about 15 minutes until cooked through. Drain and set aside. Once cool enough to handle, peel the eggs and set them aside. Fry the potatoes in hot oil until their skins are crisp and slightly wrinkled. Drain and set aside.
  2. Prepare the Jengkol:

    • If you have jengkol, you can either fry, boil, or steam it until tender. If jengkol is unavailable, you can use a substitute such as another type of legume or bean.
  3. Blend the Spice Paste:

    • In a blender or food processor, blend the tomato, red chili peppers, bird’s eye chilies, and shallots into a smooth paste. Set aside. Lightly crush the lemongrass and set it aside.
  4. Cook the Spice Paste:

    • Heat a generous amount of cooking oil in a skillet over medium heat. Add the blended spice paste and sauté until fragrant and the oil begins to separate from the paste.
  5. Combine Ingredients:

    • Add the crushed lemongrass and bay leaves to the skillet. Stir well, then pour in a little water to create a sauce. Add the baby potatoes, boiled eggs, and jengkol to the skillet. Stir everything together and cook until the liquid is absorbed and the flavors meld together.
  6. Season and Serve:

    • Season the dish with palm sugar, salt, and ground black pepper to taste. Adjust the seasoning as needed. Serve the Balado Takoler hot with steamed rice, and enjoy!
