Spicy Indonesian Krengsengan Chicken with Mustard Greens

Krengsengan Ayam (Krongkongan Ayam)

Ingredients:

  • 2 krongkongan ayam (chicken wings or drumsticks)
  • 1 bunch of mustard greens
  • 10 leaves of napa cabbage
  • 5 red chilies
  • 5 cloves of garlic
  • 3 candlenuts
  • Optional: 3 shallots (if desired, though not used here as they were out of stock)
  • 2 cups of water
  • 3 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons soy sauce (kecap asin)
  • 1 teaspoon chicken bouillon powder
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • A bit of oil for sautéing
  • 1 1/2 tablespoons chili powder
  • A pinch of pepper
  • 1 tablespoon soy sauce (Raja Rasa) – (omit if unavailable)

Instructions:

  1. Prepare the Ingredients: Begin by finely grinding the candlenuts, garlic, and red chilies together in a mortar and pestle or a food processor. This will form the base of your spice paste.

  2. Prepare the Vegetables: Wash and cut the mustard greens and napa cabbage into bite-sized pieces.

  3. Prepare the Chicken: Cut the chicken into pieces according to your preference.

  4. Sauté the Spice Paste: Heat a small amount of oil in a large skillet or pot over medium heat. Add the ground spice paste to the hot oil and sauté until fragrant, about 2-3 minutes.

  5. Cook the Chicken: Add the chicken pieces to the pot and cook until they begin to change color, stirring occasionally to ensure they are evenly coated with the spice paste.

  6. Add Water: Pour in the water and bring the mixture to a boil. Reduce the heat and let it simmer until the chicken is fully cooked and tender, about 15-20 minutes.

  7. Season the Dish: Once the chicken is cooked, add the sweet soy sauce, soy sauce, chicken bouillon powder, salt, and sugar. Stir well to combine. Taste and adjust the seasoning if needed.

  8. Add Vegetables: Add the mustard greens and napa cabbage to the pot. Continue to cook until the vegetables are tender and the sauce has slightly reduced, about 5-10 minutes.

  9. Finish and Serve: Adjust the seasoning to your taste. Serve the Krengsengan Ayam hot, and enjoy!

Note: If you have soy sauce (Raja Rasa), add it along with the other seasonings. If not, the dish will still be delicious without it.
