Ikan Kembung Cabe: A Flavorful Indonesian Spicy Mackerel Delight

Ingredients:

  • 500 grams mackerel (Ikan Kembung)

For the Marinade:

  • Coriander seeds (to taste)
  • 4 cloves garlic
  • 4 cloves shallots
  • 2 slices fresh turmeric (or 1 teaspoon turmeric powder)
  • Salt (to taste)

For the Sauce:

  • 8 cloves shallots
  • 4 cloves garlic
  • 1 red chili pepper
  • 1 ripe tomato
  • Sugar (to taste)
  • Salt (to taste)
  • Water (as needed)
  • Lime juice or vinegar (to taste)

Instructions:

  1. Prepare the Fish:

    • Rinse the mackerel thoroughly and pat dry. Rub the fish with lime juice or vinegar, and let it marinate for 10 minutes. This step helps to remove any fishy odor and adds a tangy flavor.
  2. Marinate the Fish:

    • In a blender or food processor, grind the coriander seeds, garlic, shallots, and fresh turmeric into a smooth paste. Rub this spice paste all over the fish, ensuring it’s well-coated. Allow the fish to marinate for 15 minutes to absorb the flavors.
  3. Fry the Fish:

    • Heat oil in a frying pan over medium heat. Fry the marinated mackerel until it’s crispy and golden brown on both sides. Remove from the pan and drain on paper towels to remove excess oil.
  4. Prepare the Sauce:

    • In the same blender or food processor, blend the shallots, garlic, red chili pepper, and tomato until smooth. Heat a little oil in a pan over low heat, and sautĂ© the blended mixture until fragrant and the oil starts to separate.
  5. Cook the Sauce:

    • Add a small amount of water to the pan to achieve your desired sauce consistency. Season with salt and sugar, adjusting to taste. Simmer for a few minutes to let the flavors meld together.
  6. Combine and Serve:

    • Gently add the fried mackerel into the sauce, ensuring the fish is well-coated. Cook for an additional 2-3 minutes to allow the flavors to infuse.
  7. Final Touch:

    • Adjust the seasoning with more salt or sugar if needed, and add a splash of lime juice or vinegar for a zesty kick.
  8. Serve:

    • Transfer the Ikan Kembung Cabe to a serving plate. Enjoy it hot with steamed rice or as part of a traditional Indonesian meal.

This delightful Indonesian dish showcases the perfect balance of spices and the robust flavor of mackerel, creating a memorable culinary experience that’s sure to impress.
