Ingredients:

  • 250 grams milkfish offal (cleaned thoroughly, similar to how you would clean chicken offal)
  • 1 lime (juiced)
  • 5 shallots (thinly sliced)
  • 2 cloves garlic (thinly sliced)
  • 1 large red chili (sliced)
  • 20 small bird’s eye chilies (whole)
  • Galangal (to taste)
  • Ginger (to taste)
  • 1 bay leaf
  • 1 kaffir lime leaf
  • Cooking oil (as needed)
  • Salt (to taste)
  • 1 packet of Masako seasoning (or any preferred seasoning)

Steps:

  1. Prepare the Offal: Begin by cleaning the milkfish offal thoroughly. Ensure all internal organs, including the gallbladder, are properly cleaned to avoid any bitterness. Rinse well under cold water, then squeeze the juice of one lime over the offal. Allow it to marinate for a few minutes before rinsing again.

  2. Prepare the Spices: Heat a sufficient amount of cooking oil in a pan over medium heat. Add the sliced shallots and garlic, and sauté until fragrant and golden brown.
