For Boiling the Oxtail:

  • 1 carrot
  • 1/2 onion
  • 2 celery stalks
  • Whole peppercorns
  • Star anise (optional)

Steps

  1. Prepare the Oxtail Broth:

    • Begin by boiling the oxtail for approximately 3 hours. Add the carrot, half an onion, celery stalks, whole peppercorns, and star anise to the boiling water to infuse the broth with flavor.
    • Ensure that the water simmers gently and does not boil vigorously to prevent the oxtail meat from separating from the bone.
    • Once cooked, reserve the oxtail broth for later use.
  2. Fry the Oxtail and Potatoes:

    • Heat some oil in a pan and fry the oxtail pieces and the pre-boiled potato until they are golden brown. This step ensures a crispy exterior while maintaining a tender interior.
  3. Sauté the Vegetables:

    • In another pan, heat a little oil and sauté the chopped onion, minced garlic, sliced red and green bell peppers, and red chili peppers until they begin to soften.
  4. Combine and Cook:

    • Pour in the reserved oxtail broth into the sautéed vegetables. Add the oyster sauce, sweet soy sauce, soy sauce, chili sauce, salt, pepper, and sugar. Stir well to combine all the ingredients.
    • Continue to cook the mixture until the liquid reduces and the sauce thickens to a caramel-like consistency. Adjust the seasoning to taste.
  5. Finish and Serve:

    • Once the sauce has thickened, add the fried oxtail and potatoes to the pan. Stir gently to coat them in the sauce.
    • Transfer the oxtail and sauce to a serving dish, and if desired, sprinkle with fried shallots for added texture and flavor.
