For Boiling the Oxtail:

- 1/2 onion
- 2 celery stalks
- Whole peppercorns

- Begin by boiling the oxtail for approximately 3 hours. Add the carrot, half an onion, celery stalks, whole peppercorns, and star anise to the boiling water to infuse the broth with flavor.

- Once cooked, reserve the oxtail broth for later use.
