Spicy Indonesian Rica Rica Chicken

Rica Rica Chicken

Ingredients:

  • 500 grams chicken breast, cut into pieces
  • 1/2 onion, sliced thinly
  • 2 tablespoons sweet soy sauce
  • 1 tablespoon palm sugar
  • 1/2 teaspoon ground black pepper
  • Salt and chicken bouillon powder, to taste
  • Water, as needed

Spice Paste:

  • 4 cloves garlic
  • 6 shallots
  • 3 candlenuts
  • 6 red curly chilies
  • 15 red bird’s eye chilies (add more if you prefer extra spiciness)

Instructions:

  1. Sauté Aromatics:
    Heat a pan over medium heat and sauté the sliced onion until fragrant.

  2. Cook the Spice Paste:
    Add the spice paste (blended garlic, shallots, candlenuts, and chilies) along with the other seasonings. Continue to sauté until the paste is aromatic and well-cooked.

  3. Add Chicken:
    Introduce the chicken pieces to the pan, stirring continuously. Cook until the chicken changes color and is no longer pink.

  4. Seasoning:
    Incorporate the sweet soy sauce, palm sugar, salt, ground black pepper, and chicken bouillon powder into the pan.

  5. Simmer:
    Add a little water to the mixture. Allow the chicken to cook thoroughly, letting the flavors meld together as the sauce reduces. Adjust seasoning to taste.

  6. Serve:
    Once the chicken is cooked through and the sauce has thickened, taste and adjust seasoning if necessary. Serve the Rica Rica Chicken hot, garnished as desired.
